This course consists of a number of evenings in the kitchen of an expert cook. A theoretical introduction to the regional varieties of Italian cooking will be followed by a session in which students can practice making the local (or non-local) recipes presented during the evening. When the dishes are ready, students will sit down to a meal together in a friendly atmosphere and taste/test the results of their efforts. The proof of the pudding is in the eating!
